Aged for 4 6 months and named after the cheesemaker's ancestor, this is a must try for fans of Spanish Manchego. Expect aromas of toasted butter and caramel, with a pleasantly umami browned butter taste. Fantastic in omelettes and pasta, or with a glass of off dry rose or light red.
