The best grapes, coming from low yielding vineyards with an average age of 60 years, found in Gimileo and Haro, in the heart of la Rioja. In the bodega the grapes are destemmed, then cold macerated for 3 days before alcoholic fermentation in small tanks with temperature control following ecological guidelines.
