凤凰水仙，是潮州凤凰山的原生茶树，南宋时期已经有种植记录，是乌龙茶的老祖宗。水仙，因其叶型似鸟嘴，又被当地人称之为“鸟嘴”。口感醇厚，滋味浓郁，回甘甜软，果蜜味好。现时凤凰山茶农都不再新种植水仙新茶苗，大多数都种蜜兰香，芝兰香，鸭屎香等热门品种，现有的水仙茶树至少都是上世纪七、八十年代的老茶树，所以性格比非常高，值得一品的茶。
