Add it to salad dressings, desserts, marinades, BBQ sauce, mixed drinks, glazes, or drizzle it over vanilla ice cream. It takes 120 gallons of birch sap to make 1 gallon of syrup (maple syrup needs 40). The birch season begins when the maple season ends, around the first of April, and it's a short season of
