Japanese Gyuto Sheath:Knife + Brown Leather Sheath this scoop will fit rightMy take on a Japanese style Gyuto comes in the form of a 9" (230mm) slicing blade. akin to a European style chef knife, but has a few distinct differences. My Gyuto has a flatter edge than a 8" chef knife, which promotes more of a chopping action over rocking, however the tip is swept up enough to allow for a little bit of comfortable rocking. However, where this blade excels at is with slicing, perfect for both vegetables as well as meat.
