Cheese Knife Handle Material:Pau Ferro both exotic hardwoods chosen forOur cheese knife has been designed with attention for very fine slicing of all types of cheese. The design has weight reduction holes which help with release, and allow for pushing the cut cheese off of the blade. The starting stock for our cheese knife is 1 16", which is ground to a very sharp edge and heat treated in a 6 stage process to allow for durability. This edge geometry and heat treatment allow the knife to also serve a variety of purposes
