Stainless Steel 8" Western Chef Knife Sheath:Knife + Black Leather Sheath OAL: 13" (330 mm)This 8" Western style Chef knife is hand forged from AEBL High Carbon Stainless Steel. This steel is very durable and holds an excellent edge. This steel performs very similarly to a high end carbon steel, while being fully stainless. The full tang blade is 3 32" thick at the spine and has a full distal taper toward the tip, and a thin edge which holds up well on meat and vegetables. As this blade is hand forged, I left a bit of the forge scale by the
