2014 Patrick Piuze Chablis 1er Cru "Vaillons les Minots" The sweet-tart tangerine finish isWorking with a parcel of 70 year old vines with full southern exposure, Piuze ferments and ages this wine in neutral oak barrels. It has the cidery tang of a natural wine, chalky and a little otherworldly in its complexity and concentrated citrus flavors. The structure is different from the other Piuze wines recommended here, but its an intriguing difference and worth following to see how it will age.
