Only wild yeast from the grapes has been used for the fermentation. Very limited So2 is added during bottling to give a stable wine, the majority of the So2 comes naturally from the vinification. The wine has after vinification been stored in steel tanks before passing through a careful filtration prior the bottling. The producer is one of Italy's leading biodynamic producers and the wine
